This is my favorite salsa recipe that a friend at work gave me. All the ingredients are fresh except the tomatoes, yet it tastes just as good or better than fresh. We usually make it on Sunday morning to eat as soon as we get home from church with a big bag of El Azteca chips. YUM! With the can tomatoes you can make it all winter too. Here is the recipe:
2 (14oz) cans diced tomatoes
1 red onion
nickel size slice of jalapeno
2 anaheim chili peppers
1/2 green bell pepper
2-3 cloves garlic
handful of cilantro
garlic salt
In a food processor (I bought one just to make this) process the tomatoes to desired consistency. Add to a bowl. Put all other vegetables in food processor and process to desired consistency. (Of course, make sure you take out all the seeds from the peppers and wash well.) Add to bowl with tomatoes. Sprinkle top with garlic salt and stir well. Refrigerate. Enjoy!
Tip: Even if you have washed your hands well after handling the peppers, used paper towels instead of a dish towel, and it's been at least a half hour since you made it and you even pushed your fingernails into the bar of soap in the shower--DO NOT proceed to put your contacts in. The stinging is very painful, although it doesn't last long.
