Got Tomatoes?



Yum, yum, yum...
I finally made this tomato pie recipe that my mom gave me last year. Why did I wait? It was delicious! I think I'll make it again this week. Jordan and I each had two slices and he said that he could eat the rest of it.
Just a note: you need to eat it all that same day. You can put it in the fridge and heat it in the microwave a few hours later, but don't heat it up the next day because the crust gets too soggy. 

Tomato Pie

4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 cup chopped green onions
1 (9-inch) prebaked deep dish pie shell (I just made my own pie crust and baked it)
1 cup grated mozzarella cheese
1 cup grated cheddar cheese
1 cup mayonnaise
4 slices bacon, cooked and crumbled
salt and pepper

Place the tomatoes in a colander in the sink in a single layer. Sprinkle with salt and allow to drain for 10 minutes.

Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper to taste. Combine the grated cheeses, bacon and mayo together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly brown in a 350 degree oven. 

To serve, cut into slices and serve warm. ENJOY!

I've got tomatoes - zucchini! Dad was drooling when you called to ask a question regarding the recipe so he requested it for the Labor Day dinner. The only change is that I arranged thinly sliced zucchini on the bottom, then prepared it the usual way. Those frozen pie shells work well, too. I just finished dinner and want to eat the whole thing! You're doing wonders in the kitchen, my dear. Love, Mom
