I have never liked granola. I don't ever eat it, I don't eat granola bars--yuck! I don't even like trail mix much, unless it's loaded with chocolate stuff.
So last week I got the idea to make granola for my family. I found a recipe that had good reviews and made it. I don't like or eat coconut either and this granola recipe has coconut in it. I was definitely NOT going to try it. Well...
Maybe I should just sample a bite for the heck of it to see what all the fuss is about granola. I took the bowl and sat down.
(Move forward in time about five minutes.)
Deanna is still holding the bowl of granola and eating away in pure bliss. I really had to hand it over to Steve and say, "Don't let me eat anymore." He then proceeded to eat from the bowl and kept mumbling with a mouth full, "This stuff is really good." The granola was gone the next day.
We have missed it terribly so I had to make another batch yesterday. My favorite way to eat it (other than from the bowl) is to put it on my yogurt for breakfast. YUM!! Guess what? I guess I don't hate granola. Maybe I just hate store bought granola, but I LOVE homemade granola.
I have to share the recipe. I'm sure there are other great ones around, but we love this one so much, I don't know why we'd switch. The great thing is that you can add whatever to it-flaxseed and other healthy stuff.
Granola
3 cups old fashioned rolled oats
1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 1 tablespoon brown sugar
1/4 cup plus 1 tablespoon maple syrup
1/4 cup vegetable oil
1/2 teaspoon salt
1 cup raisins (I put more than a cup of a fruit medley bag from Target.)
Preheat over to 250 degrees F.
In a large bowl, combine the oats, nuts, coconut, and brown sugar.
In a separate bowl, combine maple syrup, oil, and salt.
Combine both mixtures and pour onto a cookie sheet with sides.
Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
Remove from oven and transfer into a large bowl.
Add raisins and mix until evenly distributed.

What - the girl who HATES coconut is now eating it? Wow. Isn't it great we can always change our mind about something. Good for you. Next, you'll be eating hot dogs! HA HA
I will NEVER, I repeat NEVER eat hot dogs. Even if they were dipped in chocolate, I would never partake.
HAhaha, you are funny! I love the granola from Lehi Mill, it is my favorite because it is so soft and it has coconut in it. Your recipe sounds great...I will have to try it!

p.s.-I am with you on the hot dog thing...although I didn't mind them when I was pregnant... Sick!
Maybe you could combine your love of children's literature with granola and write a book like "Green Eggs and Ham"..."try it, try it, you will see, you WILL like granola, just like me!"
Okay- I am going to have to try this because it looks delicious and it passed the Deanna test! I actually adore all things granola so I'm sure I'll love it.
Maybe you could roll a hot dog in the granola... :)
