I was surprised and excited to see a Rubio's that opened up in American Fork. I love eating back home at the Encinitas Rubio's. (I believe my dad is addicted to their fish tacos.) We just had to go eat there the other day. I was not disappointed. It was just weird eating there and knowing that the beach wasn't close by.
I found out they are opening one in Orem in June. YIPEE!!!

Oh, I could eat at Rubio's morning, noon and night! I miss it and we, too, go every time we're in the San Diego area. Love that food. It looks so yummy in your photo. Haven't had any since mid March; I'm going through withdrawls, but I'm heading there soon. Where will the Orem one be?
