Day-After Turkey Melt


This recipe came from the current issue of the Food and Family Magazine from Kraft foods. It's free to subscribe and it comes five times a year. I did tweek the original a bit to my liking. We've made it two times in the past two weeks. One time we had it with a salad, and the other time we had it with soup. It's a keeper. So simple and cheap too.

Cut up chicken from a rotisserie chicken-no skin
Mix it with some mayo and curry powder
Spread mixture on slices of pumpernickel bread (lay them on a cookie sheet)
Sprinkle the tops with grated cheese
Put under the broiler for a few minutes (watch they don't burn-just let the cheese melt)

 *I put a good amount of mix on the bread and got six slices out of it.
Wal-Mart has cheap rotisserie chickens and they have pumpernickel bread $2.50/loaf
